2. Prepare Muffin Tin: Lightly grease a 12-cup muffin tin.
3. Prepare the Filling: In a mixing bowl, combine the diced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, salt, and lemon juice.
4. Top with Dough: Cut out 12 smaller circles of dough for the pie crust tops. You can leave them plain or cut decorative vents in them.
8. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
6. Cool and Serve: Allow the mini apple pies to cool in the muffin tin for a few minutes before carefully removing them. serve with a scoop of vanilla ice cream or a dollop of whipped cream.
