Mango Pancakes

Instructions: Prepare Mango Puree: Peel and dice ripe mangoes, then blend or process them until smooth to make mango puree. Measure out 1/2 cup for the recipe.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the mango puree, milk, egg, and melted butter until well combined.

Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it's okay if there are a few lumps.

Cook Pancakes: Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

Serve: Serve the mango pancakes warm with additional mango slices, maple syrup, or whipped cream.
